I totally understand! it took me a little bit to expand what I ate and figure out what I liked when I first went vegan too :~)
Well for snacks I like veggies and humus, apples and pb, cliff bars, fresh fruit, smoothies (banana berry is my fav), crackers, and homemade granola. Then for breakfast and lunch I love pb toast with sliced strawberries (daves killer bread makes the best), you can make all sorts of different oat meal using pb, jelly, fruit, nuts, chocolate, maple syrup, etc, avocado toast with hot sauce or salt and pepper is amazing, nice cream (blended frozen bananas) is delicious, veggie sandwiches, and for dinner baked sweet potatoes are great, rice and beans (I like to make a curried version), pasta like spaghetti, tofu scramble and potatoes, soups, salads, mashed potatoes, and sushi. honestly there are so many different things you could make, you just have to experiment and there are lots of foods that you ate before you went vegan that you can make vegan versions of and there are all sorts of recipes you can look up online. you can private message me if you want to and we can keep talking about it :~)
